Great Granola

I’m really not a cereal kind of person, I much prefer a cooked breakfast, but when it comes to this granola, I can eat it for days! I was a bit late to the homemade granola game, my sister raved about it, my friends loved it and I was struggling for fast and healthy breakfasts. I relented and had a go. Literally the easiest thing in the world and you can pretty much make it up without going wrong! Wahoo! I love that kind of cooking! 

This is really tasty eaten with a big scoop of greek yoghurt, a bit of milk or as a snack on it’sown. I take this to work and eat it on my break, it really is filling and keeps me going on those manic shifts. 

You can totally adapt - this is basically what I tend to put in. Any seeds / nuts / fruits and flavors such as cinnamon, nutmeg, cocoa would be fine, have a play around and work out what you like. Sometimes I add way more cocoa and make it chocolatey - or take it away altogether! 

You Will Need

Porridge oats 

Almonds - a handful 

Dried fruits ( I use apricots and sultanas) - as much as you like! 

2TBS Coconut oil 

2TBS Cocoa powder 

1tsp Cinnamon 

1TBS Chia Seeds 

1TBS good quality Maple Syrup 

1TBS Coconut flakes 

Mix everything in a big bowl, pour into a baking tray lined with baking parchment and cook in a hot oven for around 15-20 mins or until everything has crisped up! 

Use the baking parchment to make a funnel and pour into a glass jar (I have a thing for glass jars) or a tupperware and Keep sealed. Eat and enjoy!
